Hello friends, We've packed up and jumped the stream, found a place to live in London and Duane has started his life as a fully qualified Graphic Designer!! Before we left home, I had to do something with the beautiful cabbage my dad was growing in his Back to Eden garden.
My mum has an amazing ability to transform boring vegetables into the tastiest treats. As a result, me and my sister grew up loving Brussels sprouts and red cabbage dinners.
There is such difference between a store-bought cabbage and a homegrown one. As soon as I started to cut the cabbage in half, the leaves crackled and sprang apart, with the most delicious sound of freshness.
Of course, this delicious crunch couldn't be denied, so I've also made a raw version of this recipe, which I'll post soon.
Ingredients:
- Medium-sized head of red cabbage
- 1 onion (red or white)
- 120ml water
- Pinch of salt
- 2 tblsp soft brown sugar
- 2-3 cooking apples
- Pinch of nutmeg
- Pinch of cinnamon
Serves 3-4
Method:
- Remove outer and damaged leaves from cabbage, and wash thoroughly between accessible leaves.
- Remove the core, slice the remaining cabbage finely, and add to a large saucepan.
- Chop the onion into similarly sized pieces and add to the cabbage.
- Add the water, salt and sugar to the cabbage and onion, and bring to the boil.
- Peel, core and quarter the apples; chop each quarter in half.
- Layer the sliced apple on top of the cabbage, add spices, cover and reduce to a medium-low heat.
- Cook for 30-50 mins until apples have softened.
- Stir together and serve large helpings!!
P.S. If there's any leftovers, pop them on a sandwich with almond butter, cucumber and chickpeas. Yum!
